Oven-Fried Chicken


Ingredients:


* 8-10 cuts skinless chicken breasts


* 1 tsp chicken seasoning


* 1 cup breadcrumbs


* 1/2 cup skim milk


* 1/2 tbsp onion powder


1 1/2 tbsp garlic powder


* 2 tbsp red bell pepper


* 1 tsp ground ginger


* 2 tbsp black Pepper


Directions:


Mix the poultry seasoning with milk. Combine all spices in a large bag. Place the chicken pieces in a bowl and add the milk mixture. Place the chicken in a bag and shake off any excess. The bag should be shaken until the chicken breasts have been coated evenly. Put in the refrigerator for one hour.


Pre-heat oven to 350 F. Spray the baking sheet with non-stick spray. Place the chicken on the baking tray. Bake the chicken for 40 minutes, or until it is tender.


Low Fat Baked Chicken Breasts


Ingredients:


* 1/2 kilo skinless chicken strips


* 1 cup low-sugar orange marmalade


* 1 can peaches and juice


* 1 tsp olive oil


Directions:


In a skillet, heat olive oil and chicken strips until tender. Set the chicken on a plate. Take the peach juice out of the can and add it to a sauce pan. Heat orange marmalade on medium heat. Continue stirring until the mixture becomes thick and forms sauce. In a baking pan, combine the peaches and chicken. Spread the sauce on the peaches and roast in the oven for 30 minutes at 350 F. Let cool and then serve.


You will need to brine your chicken breasts if you are using dry-heat cooking. This is done by placing them in a salt-water solution for at least 30 minutes prior to cooking. To enhance flavor, you can also add broths, juices and vinegar to your dishes.


You won't get dry and dull chicken breasts if you use the moist-heat technique such as steaming, microwaving, or slow cooker.
